This recipe originates from Sarah Fargoso's book Everyday Paleo.
This will make 3-4 servings!
In a skillet heat your coconut oil over medium to high heat. Add in onions and let cook for 4 minutes.
Mince your garlic and add in with onion and cook an additional minute. Add the shrimp and saute until the shrimp are pink.
This shouldn't take long. 3 minutes or so. While the shrimp is cooking combine chili powder and salsa in a bowl and mix well. We usually use Margarita's Salsa
Add salsa and chili powder mixture to your skillet and cook until simmering.
Serve in the lettuce leaves with shredded cabbage and/or spinach leaves. Cut up your lime into wedges and serve on the plate.
